Ingredients
- 20 oz pkg refrigerated hash browns
- 1 1/2 cups shredded colby jack cheese
- 1 cup chopped ham
- 4 oz can diced green chiles
- 1/4 cup sliced green onions
- 4 large eggs
- 12 oz can evaporated milk
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Arrange potatoes in a greased 13x9 inch disposable foil pan. Sprinkle with cheese, ham, green chiles, and onions.
- Stir together eggs, milk, salt, and pepper. Pour egg mixture over potatoes. Cover with plastic wrap and aluminum foil. Label and freeze.
- When ready to cook, thaw in refrigerator 1-2 days.
- Preheat oven to 350°. Bake uncovered for 45 minutes or until browned and set. Let stand 5 minutes before serving.

Ingredients
- 12 large eggs, beaten
- 1/2 lb breakfast sausage
- 3/4 cup salsa
- 1 cup shredded cheddar cheese
- 8 taco size flour tortillas
- hot sauce, optional
Instructions
- In large greased skillet, scramble eggs until cooked but still glossy.
- Brown sausage and drain. Add salsa to sausage.
- Warm tortillas in the microwave about 15 seconds until warm and flexible
- Distribute eggs, sausage mixtures and cheese evenly over tortillas. Add a couple shakes of hot sauce, if desired. Roll burritos or tacos.
Can be frozen on wax paper. Wrap frozen burritos in foil and store in gallon bags. To serve from frozen: remove foil and wrap in paper towel. Heat in microwave for 1 1/2 - 2 minutes.
