Ingredients
- 2 lb fresh udon noodles
- 3 Tbsps vegetable oil
- 1 lb ground pork
- 2 Tbsps fresh ginger, minced
- 3 cloves garlic, minced
- ⅓ cup soy sauce
- ¼ cup rice vinegar
- 4 cups chicken stock
- 3 Tbsps peanut butter
- 1 tsp ground cinnamon
- ½ tsp crushed red pepper flakes
- 2 tsps sugar
- 1-2 Tbsps Sambal Oelek Chili Paste
- ¼ cup roasted peanuts, chopped
- ¼ cup green onions, thinly sliced
Instructions
- In large pot, cook noodles according to package directions. Drain, then divide evenly into 6 serving bowls.
- Heat oil in same pot over medium heat. Add pork, break into small bits, and cook until browned and crumbly. Add ginger and garlic; cook until fragrant, about 1 minute.
- Stir in soy sauce, vinegar, chicken stock, peanut butter, cinnamon, red pepper flakes, sugar, and chili paste. Bring to simmer and cook until sauce thickens for 5-7 minutes.
- Spoon equal amounts of pork sauce over cooked noodles and garnish with peanuts and green onions.
Notes
Yakisoba or another type of dried Asian noodle can be used in recipe. If Sambal Oelek Chili Paste is unavailable, Spicy Chili Crisp Sauce is a good substitute.
