Ingredients

  • 4-6 lb whole chicken
  • 6 medium carrots, chopped
  • 1 large yellow onion, cut into large chunks
  • 1½ lb small red potatoes, cut into large pieces
  • 6 cloves garlic, divided
  • sea salt
  • cracked pepper
  • 1 Tbsp Italian seasoning
  • 3 Tbsps butter, melted
  • ½ fresh lemon
  • 4 rosemary sprigs

Instructions

  1. Preheat oven to 375ºF. Add vegetables and 4 cloves garlic to bottom of large Dutch oven or oven-proof pan. Place chicken on top of vegetables.
  2. Rub chicken generously with sea salt, pepper, Italian seasoning, and butter.
  3. Place half lemon, 2 cloves garlic, and rosemary sprigs inside chicken cavity.
  4. Cover and bake 1 hour.
  5. Remove lid and roast 30 minutes more until skin is golden brown and chicken internal temperature reaches 165ºF.
  6. Allow chicken to rest 10 minutes before serving
