
savory dutch oven chicken

Ingredients
- 4-6 lb whole chicken
- 6 medium carrots, chopped
- 1 large yellow onion, cut into large chunks
- 1½ lb small red potatoes, cut into large pieces
- 6 cloves garlic, divided
- sea salt
- cracked pepper
- 1 Tbsp Italian seasoning
- 3 Tbsps butter, melted
- ½ fresh lemon
- 4 rosemary sprigs
Instructions
- Preheat oven to 375ºF. Add vegetables and 4 cloves garlic to bottom of large Dutch oven or oven-proof pan. Place chicken on top of vegetables.
- Rub chicken generously with sea salt, pepper, Italian seasoning, and butter.
- Place half lemon, 2 cloves garlic, and rosemary sprigs inside chicken cavity.
- Cover and bake 1 hour.
- Remove lid and roast 30 minutes more until skin is golden brown and chicken internal temperature reaches 165ºF.
- Allow chicken to rest 10 minutes before serving
