Ingredients

  • 1 lb lean ground beef
  • 1/2 large yellow onion, diced
  • taco seasoning packet
  • 15 oz can refried beans
  • 4 burrito-sized flour tortillas
  • 1/2 cup salsa
  • 2 cups finely shredded Mexican blend cheese
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 1/4 cup jalapeno pepper, thinly sliced
  • 1/4 cup sour cream (optional)

Instructions

  1. Preheat oven to 350. Coat 2 sheet pans or pizza pans with cooking spray.
  2. In large skillet, cook ground beef and onion over medium heat until beef is browned and crumbly; drain. Add taco seasoning and 3/4 water. Stir and heat for 3-5 more minutes.
  3. Place one tortilla on each pan and cover with layer of refried beans. Spread half ground beef over each one. Cover with a second tortilla.
  4. Bake until tortillas are crisp, about 10 minutes.
  5. Remove pizzas from oven. Spread half of salsa over top of each tortilla. Cover each pizza with half of cheese, tomatoes, green onions, and jalapeño slices.
  6. Return pizzas to oven and bake until cheese is melted, for 5-10 minutes.
  7. Let pizzas cool before slicing each into 4 pieces. Serve with sour cream, if desired.
