Ingredients
- 1 lb lean ground beef
- 1/2 large yellow onion, diced
- taco seasoning packet
- 15 oz can refried beans
- 4 burrito-sized flour tortillas
- 1/2 cup salsa
- 2 cups finely shredded Mexican blend cheese
- 2 tomatoes, diced
- 2 green onions, chopped
- 1/4 cup jalapeno pepper, thinly sliced
- 1/4 cup sour cream (optional)
Instructions
- Preheat oven to 350. Coat 2 sheet pans or pizza pans with cooking spray.
- In large skillet, cook ground beef and onion over medium heat until beef is browned and crumbly; drain. Add taco seasoning and 3/4 water. Stir and heat for 3-5 more minutes.
- Place one tortilla on each pan and cover with layer of refried beans. Spread half ground beef over each one. Cover with a second tortilla.
- Bake until tortillas are crisp, about 10 minutes.
- Remove pizzas from oven. Spread half of salsa over top of each tortilla. Cover each pizza with half of cheese, tomatoes, green onions, and jalapeño slices.
- Return pizzas to oven and bake until cheese is melted, for 5-10 minutes.
- Let pizzas cool before slicing each into 4 pieces. Serve with sour cream, if desired.
