quick and easy lasagna

Slow Cooker Steak Chili

 Ingredients

  • 1 1/2 lbs stew beef
  • 1/2 yellow onion, chopped
  • 15 oz can pinto beans, rinsed and drained
  • 28 oz Rotel
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 1/2 tsp garlic salt
  • 1/4 tsp red pepper flakes
  • 1/4 tsp dried oregano
  • 1/4 tsp black pepper
  • optional - shredded cheese, sour cream, avocados
Instructions
  1. Place all ingredients in crockpot. Stir to combine. 
  2. Cover and cook for 8 hours.
  3. Serve with optional toppings.



***this one was not a hit. Annabelle and I prefer a more traditional ground beef/ground turkey chili with a tomato base. This felt more like a stew.

Ingredients: 

  • 2 onions, chopped
  • 1/4 cup olive oil
  • 2 large cans Italian plum tomatoes
  • 2 can burgundy wine
  • 1 tsp basil
  • 1 package lasagna noodles
  • 1 package low fat mozzarella cheese
  • 4 garlic buds
  • 2 tsp oregano
  • 2 small cans tomato puree
  • 2 cans water
  • 3 lbs ground beef
  • 1 small container ricotta cheese
  • 1 pkg parmesan cheese
Instructions:
  1. Brown onion and garlic in olive oil. Remove garlic and save oil
  2. To oil add oregano, plum tomatoes, tomato puree, wine, water and basil. The longer the sauce cooks the better.
  3. Brown ground beef, drain, and discard fat. 
  4. Add meat to sauce and simmer. 
  5. Cook lasagna noodles as directed. 
  6. Grease pan and layer sauce, noodles, ricotta, mozzarella and parmesan. Repeat layers.  
  7. Bake covered at 350° for 45 minutes. 
  8. Remove foil and bake for additional 10 minutes to brown cheese.

Easy Ground Beef Enchiladas

Ingredients

Large can (28 oz) red or green enchilada sauce

Lean ground beef

black beans

cheddar cheese

flour tortillas


Instructions

·        Warm enchilada sauce in sauce pan over medium heat.

·        While the sauce is simmering, brown your hamburger. Drain the fat and stir in black beans, cheese, and a bit of sauce. 

·        Preheat the oven to 350 degrees.

·        Spread about 1/2 cup of the sauce in a 9×13″ pan that has been sprayed with cooking spray. 

·        Spread filling down the center of each tortilla, roll up, and place seam side down in the pan. Pour remaining sauce over the top, then sprinkle with cheese.

·        Cover pan with foil and bake at 350° for about 25 minutes until hot and bubbly. 

·        Serve with lettuce, tomatoes, sour cream, and any other desired toppings.
