creamy spinach & sausage pasta

Ingredients
- 14 oz pkg smoked sausage, sliced
- 1 Tbsp olive oil
- 1 medium yellow onion, diced
- 10 oz can diced tomatoes with green chiles
- 8 oz medium egg noodles
- 2 cups chicken broth
- 3 cups fresh spinach
- 1 cup three cheese blend, shredded
- 4 green onions, sliced
Instructions
- In large skillet, cook sausage in oil over medium heat until sausage is browned; drain, if needed. Add onion to skillet and sauté until onions have softened.
- Add tomatoes, uncooked pasta, and chicken broth; stir until combined.
- Cover and allow broth to come to boil. Once boiling, reduce heat to medium-low and let pasta simmer for 10 minutes, until tender. Stir occasionally, replacing lid each time.
- Gently stir spinach into pasta. Once spinach has wilted, top with cheese. Place lid back on skillet and heat over low until cheese is melted.
- Sprinkle sliced green onions over top just before serving
