- 20 oz pkg refrigerated hash browns
- 1 1/2 cups shredded colby jack cheese
- 1 cup chopped ham
- 4 oz can diced green chiles
- 1/4 cup sliced green onions
- 4 large eggs
- 12 oz can evaporated milk
- 1/4 tsp salt
- 1/4 tsp pepper
- Arrange potatoes in a greased 13x9 inch disposable foil pan. Sprinkle with cheese, ham, green chiles, and onions.
- Stir together eggs, milk, salt, and pepper. Pour egg mixture over potatoes. Cover with plastic wrap and aluminum foil. Label and freeze.
- When ready to cook, thaw in refrigerator 1-2 days.
- Preheat oven to 350°. Bake uncovered for 45 minutes or until browned and set. Let stand 5 minutes before serving.
Hashbrown and Ham Casserole

Ingredients
- 1 lb breakfast sausage
- 32 of pkg frozen shredded hash brown potatoes
- 2 cups shredded sharp cheddar cheese
- 6 green onions, sliced
- 12 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp pepper
- flour tortillas
Instructions
- In large skillet, over medium heat, cook sausage until browned and crumbly, drain.
- Spray slow cooker with cooking spray and layer half of the hash browns in the slow cooker. Add half the cooked sausage, 1 cup cheddar cheese and half of the green onions; top with remaining hash browns.
- Layer the rest of the sausage, cheese, and green onions on top of the hash browns.
- Beat eggs well, mixing in milk, salt and pepper. Pour egg mixture over casserole.
- Cover and cook on low 7 hours or on high 3-4 hours.

- 1/2 lb breakfast sausage
- 5 large eggs
- 1/2 cup heavy cream
- 1/4 cup milk
- 1/2 tsp garlic salt
- 1 cup shredded cheddar cheese
- 1 premade 9 in deep dish pie crust
- In medium skillet, cook sausage until browned and crumbly, drain well
- In large bowl, whisk together eggs, cream, milk, and garlic salt until well combined. Whisk in cooked sausage and cheese.
- Prebake pie crust according to directions.
- Pour egg mixture into pie crust. Cover loosely with foil and bake for 30 mins. Remove foil for last 10 minutes and continue baking until top is golden brown.
sausage & cheese quiche

Ingredients
- 12 large eggs, beaten
- 1/2 lb breakfast sausage
- 3/4 cup salsa
- 1 cup shredded cheddar cheese
- 8 taco size flour tortillas
- hot sauce, optional
- In large greased skillet, scramble eggs until cooked but still glossy.
- Brown sausage and drain. Add salsa to sausage.
- Warm tortillas in the microwave about 15 seconds until warm and flexible
- Distribute eggs, sausage mixtures and cheese evenly over tortillas. Add a couple shakes of hot sauce, if desired. Roll burritos or tacos.

Ingredients

10 slices day-old French bread (3/4
inch thick)

6 eggs, lightly beaten

2 ¾ cups milk

2/3 cup sugar, divided

1 tablespoon vanilla extract

4 medium apples, peeled, and thinly
sliced

2 tsp ground cinnamon
·
¾ tsp ground nutmeg
·
1 tablespoon
Instructions
·
Place bread in 13x9x2 baking dish
·
Combine eggs, milk, 1/3 cup sugar, and
vanilla. Pour over bread. Top with half the apples
·
Combine cinnamon, nutmeg and remaining
sugar. Sprinkle half over apples. Top with remaining apples. Pour remaining egg
mixture over apples and sprinkle with remaining sugar mixture. Dot with butter.
·
Cover and chill 8 hours or overnight.
·
Remove from refrigerator 30 minutes
before baking.
·
Bake uncovered at 350° for 1 hour;
until knife inserted near the center comes out clean.
·
Let stand 5 minutes before serving.
