Ingredients
  • 20 oz pkg refrigerated hash browns
  • 1 1/2 cups shredded colby jack cheese
  • 1 cup chopped ham
  • 4 oz can diced green chiles
  • 1/4 cup sliced green onions
  • 4 large eggs
  • 12 oz can evaporated milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Arrange potatoes in a greased 13x9 inch disposable foil pan. Sprinkle with cheese, ham, green chiles, and onions. 
  2. Stir together eggs, milk, salt, and pepper. Pour egg mixture over potatoes. Cover with plastic wrap and aluminum foil. Label and freeze. 
  3. When ready to cook, thaw in refrigerator 1-2 days. 
  4. Preheat oven to 350°. Bake uncovered for 45 minutes or until browned and set. Let stand 5 minutes before serving. 


Hashbrown and Ham Casserole

Ingredients

  • 1 lb breakfast sausage
  • 32 of pkg frozen shredded hash brown potatoes
  • 2 cups shredded sharp cheddar cheese
  • 6 green onions, sliced
  • 12 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • flour tortillas

Instructions

  1. In large skillet, over medium heat, cook sausage until browned and crumbly, drain. 
  2. Spray slow cooker with cooking spray and layer half of the hash browns in the slow cooker. Add half the cooked sausage, 1 cup cheddar cheese and half of the green onions; top with remaining hash browns. 
  3. Layer the rest of the sausage, cheese, and green onions on top of the hash browns. 
  4. Beat eggs well, mixing in milk, salt and pepper. Pour egg mixture over casserole. 
  5. Cover and cook on low 7 hours or on high 3-4 hours.

 Ingredients

  • 1/2 lb breakfast sausage
  • 5 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1/2 tsp garlic salt
  • 1 cup shredded cheddar cheese
  • 1 premade 9 in deep dish pie crust
Instructions
  1. In medium skillet, cook sausage until browned and crumbly, drain well
  2. In large bowl, whisk together eggs, cream, milk, and garlic salt until well combined. Whisk in cooked sausage and cheese. 
  3. Prebake pie crust according to directions.
  4. Pour egg mixture into pie crust. Cover loosely with foil and bake for 30 mins. Remove foil for last 10 minutes and continue baking until top is golden brown.

Ingredients

  • 12 large eggs, beaten
  • 1/2 lb breakfast sausage
  • 3/4 cup salsa
  • 1 cup shredded cheddar cheese
  • 8 taco size flour tortillas
  • hot sauce, optional

Instructions
  1. In large greased skillet, scramble eggs until cooked but still glossy.
  2. Brown sausage and drain. Add salsa to sausage.
  3. Warm tortillas in the microwave about 15 seconds until warm and flexible
  4. Distribute eggs, sausage mixtures and cheese evenly over tortillas. Add a couple shakes of hot sauce, if desired. Roll burritos or tacos.
Can be frozen on wax paper. Wrap frozen burritos in foil and store in gallon bags. To serve from frozen: remove foil and wrap in paper towel. Heat in microwave for 1 1/2 - 2 minutes.

Ingredients

• 1 cup grits

• 1 can cream of chicken soup

• 1 cup shredded cheddar

• sprinkle a little paprika in and on top

Instructions

• cook grits in chicken broth for added flavor

• 1 cup of grits is pre-cooked measurement

• top with green onions or crumbled bacon

• also goes well with fried green tomatoes

 Ingredients

·        10 slices day-old French bread (3/4 inch thick)

·        6 eggs, lightly beaten

·        2 ¾ cups milk

·        2/3 cup sugar, divided

·        1 tablespoon vanilla extract

·        4 medium apples, peeled, and thinly sliced

·        2 tsp ground cinnamon

·        ¾ tsp ground nutmeg

·        1 tablespoon

 

Instructions

·        Place bread in 13x9x2 baking dish

·        Combine eggs, milk, 1/3 cup sugar, and vanilla. Pour over bread. Top with half the apples

·        Combine cinnamon, nutmeg and remaining sugar. Sprinkle half over apples. Top with remaining apples. Pour remaining egg mixture over apples and sprinkle with remaining sugar mixture. Dot with butter.

·        Cover and chill 8 hours or overnight.

·        Remove from refrigerator 30 minutes before baking.

·        Bake uncovered at 350° for 1 hour; until knife inserted near the center comes out clean.

·        Let stand 5 minutes before serving.
