Laminated pasta is cool. We made 3 flavors of pasta, stuck them together and rolled it out. Yellow=turmeric, green=spinach & red=beets. The raviolis we made were filled with ricotta cheese and served with an Alfredo sauce.

Caesar salad - which evidently was invented in Mexico City, so I'm not sure why we are talking about in Italy.

Veal osso bucco (this is traditionally served bone-in and the bone marrow is spread over a piece of bread.  We had to portion enough for our whole class so we couldn't serve it that way.
