30 Minstuffed poblano peppers
Ingredients
- ½ lb Italian turkey sausage links, casings removed
- 1 lb lean ground beef
- 8.8 oz ready-to-serve Spanish rice
- 6 large poblano peppers
- 1 cup enchilada sauce
- ¾ cup Mexican-blend cheese, shredded
- fresh cilantro (optional)
Instructions
- Preheat oven broiler.
- In large skillet, cook turkey and beef over medium heat until browned and crumbly; drain.
- Prepare rice according to package directions. Add rice and enchilada sauce to meat mixture.
- Cut peppers lengthwise in half; remove seeds. Place on foil-lined 15x10-inch baking sheet, cut side down. Broil 4-inches from heat until skin blisters, about 5 minutes.
- With tongs, turn peppers over, fill with meat mixture, and sprinkle with cheese.
- Broil additional 1-2 minutes, until cheese is melted. Top with cilantro, if desired.
