Ingredients

  • ½ lb Italian turkey sausage links, casings removed
  • 1 lb lean ground beef
  • 8.8 oz ready-to-serve Spanish rice
  • 6 large poblano peppers
  • 1 cup enchilada sauce
  • ¾ cup Mexican-blend cheese, shredded
  • fresh cilantro (optional)

Instructions

  1. Preheat oven broiler.
  2. In large skillet, cook turkey and beef over medium heat until browned and crumbly; drain.
  3. Prepare rice according to package directions. Add rice and enchilada sauce to meat mixture.
  4. Cut peppers lengthwise in half; remove seeds. Place on foil-lined 15x10-inch baking sheet, cut side down. Broil 4-inches from heat until skin blisters, about 5 minutes.
  5. With tongs, turn peppers over, fill with meat mixture, and sprinkle with cheese.
  6. Broil additional 1-2 minutes, until cheese is melted. Top with cilantro, if desired.
